If you have the small edible pumpkins at home, you can use them for this simple recipe. This can be served as a side dish to any meal.
2 cups of pumpkin, peeled, seeded and cut in to small cubes.
½ small yellow onion, diced
3 garlic cloves, minced
1 table spoon olive oil
½ tea spoon turmeric
Put a pot on a medium heat and add the olive oil. When the oil is hot, add the onion and cook for 5 minutes. Add the garlic and cook for 1 minute. Add the water, turmeric and pumpkin and cook for 15 minutes. Add salt to taste.
